Use 4 cups of day old bread.
Cut into 1 inch pieces.
Dip the bread cakes into mix that contains
3 eggs
2 cups milk
1/2 cup sugar
2 tsps. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt. (if desired, add 1/2 cup raisins and coconut)
Place bread cakes in greased casserole. Pour butter over and toss.
In bowl, mix beaten eggs, sugar, milk and the rest.
Pour over bread cakes and stir to coat. Bake at 375 degrees for 45 minutes.
Julie Cider's Sour Cream Coffeecake
Topping:
1 1/2 cups of brown sugar
6 tablespoons of white sugar
1 1/2 teaspoons cinnamon
Cake:
1 1/2 sticks margarine
1 1/2 cups sugar
3 eggs
3 cups white flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
3 1/4 tablespoons of salt
2 cups sour cream
1 1/2 teaspoons vanilla
Cool 45-50 minutes at 32 degrees. Put down a layer of batter, a layer of topping and then another layer of batter.

4 large potatoes-approx. 2 pounds
1 tbs. salt
1 large egg beaten in a small bowl
1 1/2-2 cups unbleached flour or all purpose flour.
Make a long, deep slit in center of potatoes and bake until tender (approx. 1 hour). Peel potatoes when cool and mash with a fork. Place potatoes on a large board and season with the salt. Add the egg and 1 1/3 cups of the flour. Mix with your hands until dough begins to stick together (add a little more flour if too sticky). Knead dough for about 5-10 minutes until smooth and pliable, and should be a little sticky. Make a roll of thickness of your index finger, and cut each roll into 1" pieces. Hold a fork with the tines against the board. Press pieces of dough to shape into a gnocchi (like a small clam shell). Place these on a cloth covered lightly with flour. (I use old clean cut-up sheets-no bleach on sheets). Now you can cook in vigorously boiling water with salt.
Delicious Lemon Chicken
This dish serves 4 people.
vegetable oil spray
1 3-pound frying-chicken, skinned and cut into serving pieces
1 clove crushed garlic
1/2 teaspoon of freshly ground pepper
2 tablespoons of vegetable oil
2 tablespoons of fresh lemon juice.
Preheat the oven to 350 degrees F. Lightly spray a baking pan or a shallow casserole dish with vegetable oil.
In a small bowl, combine lemon juice, oil, garlic and pepper. Set aside.
Rinse chicken and pat dry . Arrange chicken in prepared pan or dish. Pour lemon mixture over chicken pieces. Cover and bake about 40 minutes, or until tender, basting occasionally. Uncover casserole and bake 10 minutes longer to allow chicken to brown.

1/2 cup butter
1 cup sugar
2 cups flour
2 eggs
1/2 cup milk
2 tsp. baking powder
1/2 tsp. salt
2 1/2 cups of fresh blueberries
2 tsp sugar (top)
1 tsp. vanilla
On low speed, cream butter and sugar until fluffy. Add eggs, one at a time and mix until blended. Sift dry ingredients and add alternately with milk and vanilla. Mash 1/2 cup of berries and stir in by hand. Add the rest of the whole berries and stir by hand. Grease muffin tins well with butter. Pile mix high in each muffin cup. Sprinkle with sugar. Bake at 375 degrees for 30 minutes. Cool in the pan.
